
Mediterranean Chicken Gyros with Creamy Feta Tzatziki
Ingredients:
For the Chicken Marinade:
1 lb (450 g) boneless, skinless chicken breasts or thighs
2 tbsp (30 ml) olive oil
2 tbsp (30 ml) lemon juice
2 cloves garlic, minced
1 tsp (2 g) dried oregano
½ tsp (2 g) smoked paprika
Salt and pepper, to taste
For the Creamy Feta Tzatziki:
½ cup (120 g) Greek yogurt
¼ cup (40 g) crumbled feta cheese
½ cucumber, finely grated and drained
1 clove garlic, minced
1 tbsp (15 ml) olive oil
1 tsp (5 ml) lemon juice
Salt and pepper, to taste
For Assembly:
4 pita breads or flatbreads
½ cup (75 g) cherry tomatoes, halved
¼ cup (30 g) sliced red onion
¼ cup (30 g) cucumber slices
Fresh dill or parsley, for garnish
Directions:
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper. Add the chicken and marinate for at least 30 minutes (or up to 4 hours).
Heat a skillet or grill pan over medium-high heat. Cook the chicken for 5–6 minutes per side, or until golden and cooked through. Let rest for 5 minutes, then slice.
In a separate bowl, combine Greek yogurt, feta, grated cucumber, garlic, olive oil, lemon juice, salt, and pepper. Mix until creamy and well combined.
Warm the pita breads in a dry skillet or oven.
Assemble the gyros by layering sliced chicken, tomatoes, red onion, cucumber, and a generous spoonful of feta tzatziki.
Garnish with fresh dill or parsley and serve immediately.
