
🥘 Low-Carb Chicken, Spinach & Mushroom Bake 🥘

🧾 Ingredients
• 600 g (1.3 lb) chicken breast, cut into bite-size pieces
• 2 tbsp olive oil
• 250 g mushrooms, sliced
• 3 cloves garlic, minced
• 200 g fresh spinach
• 200 ml (¾ cup) heavy cream
• 100 g cream cheese
• ½ cup grated mozzarella or cheddar
• ¼ cup grated Parmesan
• 1 tsp Italian seasoning
• ½ tsp paprika
• Salt & black pepper, to taste

👩🍳 Instructions
1️⃣ Preheat oven to 190°C (375°F). Lightly grease a baking dish.
2️⃣ Cook chicken
Heat 1 tbsp olive oil in a pan. Season chicken with salt, pepper, and paprika. Sauté until lightly golden (not fully cooked). Transfer to baking dish.
3️⃣ Sauté vegetables
In the same pan, add remaining oil. Cook mushrooms until browned. Add garlic and spinach; cook until spinach wilts.
4️⃣ Make creamy sauce
Lower heat. Stir in cream cheese and heavy cream until smooth. Add Italian seasoning and adjust seasoning.
5️⃣ Combine & bake
Pour sauce and veggies over chicken. Sprinkle mozzarella and Parmesan on top.
Bake 25–30 minutes until bubbly and golden.
