🥥 Coconut Shrimp
Ingredients
• 500 g large shrimp, peeled & deveined (tails on optional)
• ½ cup all-purpose flour
• 2 eggs
• 1 cup shredded coconut (unsweetened or lightly sweetened)
• ½ cup panko breadcrumbs
• ½ tsp paprika
• ½ tsp garlic powder
• Salt & black pepper, to taste
• Oil for frying (or use air fryer/oven)
Instructions
1. Prep shrimp: Pat shrimp dry and season lightly with salt & pepper.
2. Breading stations:
• Bowl 1: Flour
• Bowl 2: Eggs, beaten
• Bowl 3: Mix coconut, panko, paprika & garlic powder
3. Coat shrimp:
Dip shrimp in flour → egg → coconut mixture, pressing gently.
4. Fry:
Heat oil to 170–180°C. Fry shrimp 2–3 minutes per side until golden and crispy.
Drain on paper towels.
Air Fryer: 190°C for 8–10 minutes, flip halfway
Oven: 200°C for 12–15 minutes

Ingredients
• ¼ cup sweet chili sauce
• Juice of 1 lime
• 1 tsp lime zest
• 1 tsp honey (optional)
• ½ tsp chili flakes or fresh chili (adjust heat)
• 1 tbsp mayonnaise or Greek yogurt (optional, for creaminess)
Instructions
Mix all ingredients until smooth. Chill 10 minutes for best flavor.
