For the Quesadillas
• 🌮 4 medium flour tortillas
• 🍎 1 apple, thinly sliced (Honeycrisp or Gala recommended)
• 🧀 150–200g Brie cheese, sliced
• 🍒 ⅓ cup cranberry sauce (fresh or canned)
• 🧈 1 tbsp butter (or oil)
• 🌿 Optional: fresh rosemary or thyme
• 🥜 Optional: chopped pecans or walnuts for crunch
For the Hot Honey
• 🍯 3 tbsp honey
• 🌶️ ½–1 tsp chili flakes (adjust heat level)
• 🥄 Optional: a tiny squeeze of lemon for brightness

1️⃣ Make the Hot Honey
1. Warm honey in a small pan (or microwave 10 seconds).
2. Stir in chili flakes and a little lemon.
3. Set aside to infuse.

2️⃣ Prepare the Quesadillas
1. Heat a skillet over medium heat.
2. Melt a little butter.
For each quesadilla:
3. Lay a tortilla in the pan.
4. Add slices of Brie on one half.
5. Add thin apple slices on top.
6. Spoon a bit of cranberry sauce over the apples.
7. Add a pinch of rosemary/thyme and nuts if using.
8. Fold tortilla in half.
