
The Best Salisbury Steak Meatballs with Rich Mushroom Gravy
🧆 Ingredients (Serves 4–5)
Meatballs
• 1 lb ground beef (80/20 for juiciness)
• ½ cup breadcrumbs (panko or regular)
• 1 egg
• ¼ cup milk
• 1 small onion, finely grated
• 2 cloves garlic, minced
• 1 tbsp Worcestershire sauce
• 1 tsp Dijon mustard
• 1 tsp soy sauce
• ½ tsp salt
• ½ tsp black pepper
• ½ tsp smoked paprika (optional)
• 1 tbsp olive oil (for searing)
Mushroom Gravy
• 2 tbsp butter
• 8 oz mushrooms (cremini or button), sliced
• 1 small onion, thinly sliced
• 2 cloves garlic, minced
• 2 tbsp flour
• 2 cups beef broth (warm)
• 1 tbsp Worcestershire sauce
• 1 tsp soy sauce
• 1 tsp Dijon mustard
• ½ tsp dried thyme (or fresh)
• Black pepper to taste

👩🍳 Instructions
1. Make the meatballs
In a large bowl, combine all meatball ingredients except olive oil.
Mix gently (don’t overwork).
Roll into golf-ball-sized meatballs.
2. Sear the meatballs
Heat olive oil in a large skillet over medium-high heat.
Sear meatballs until browned on all sides (they don’t need to be cooked through).
Remove and set aside.
3. Cook mushrooms & onions
In the same skillet, melt butter.
Add mushrooms and onions, cooking until deeply golden (8–10 minutes).
Add garlic and cook 30 seconds.
4. Build the gravy
Sprinkle flour over the mushrooms. Stir and cook 1 minute.
Slowly whisk in beef broth.
Add Worcestershire, soy sauce, Dijon, thyme, and black pepper.
5. Simmer meatballs
Return meatballs to the skillet.
Cover and simmer on low 12–15 minutes, until cooked through and gravy is thick and glossy.
6. Taste & finish
Adjust seasoning with salt or pepper if needed.
