• 4 boneless, skinless chicken breasts
• Salt & freshly ground black pepper
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• 2 tbsp olive oil

• 2 cups fresh spinach
• 1½ cups fresh mozzarella, shredded or sliced
• 2 cloves garlic, minced

👨🍳 Instructions
1️⃣ Prepare the Chicken
• Preheat oven to 190°C / 375°F.
• Cut a deep pocket into each chicken breast (don’t cut through).
• Season inside and out with salt, pepper, garlic powder, and Italian seasoning.
2️⃣ Make the Filling
• Heat 1 tbsp olive oil in a pan.
• Sauté garlic and spinach until just wilted.
• Remove from heat and mix with roasted red peppers.
3️⃣ Stuff
• Fill each chicken breast with spinach mixture and mozzarella.
• Secure with toothpicks if needed.
4️⃣ Sear
• Heat remaining olive oil in an oven-safe skillet over medium-high heat.
• Sear chicken 3–4 minutes per side until golden.
5️⃣ Bake
• (Optional) Spoon marinara or sauce around chicken.
• Transfer skillet to oven and bake 18–22 minutes, until cooked through (internal temp 74°C / 165°F).
6️⃣ Serve
• Rest 5 minutes, remove toothpicks, slice, and serve.
