• 1 bag (28–32 oz) frozen tater tots
• 6 slices bacon, chopped
• 1 cup sauerkraut, well drained and lightly chopped
• 1 cup shredded Swiss cheese
• ½ cup shredded mozzarella (for extra melt, optional)
• ½ tsp black pepper
• ½ tsp caraway seeds (optional, classic Reuben flavor)
• 2 tbsp chopped fresh parsley or chives (optional)
Thousand Island Drizzle
• ½ cup mayonnaise
• 2 tbsp ketchup
• 2 tbsp sweet pickle relish
• 1 tsp Dijon mustard
• 1 tsp lemon juice
• Salt to taste

Instructions
1. Cook the Tater Tots
• Oven: Bake according to package directions until extra crispy.
• Air Fryer: Cook at 400°F (205°C) for 12–15 minutes, shaking halfway.

2. Cook the Bacon
1. In a skillet over medium heat, cook bacon until crispy.
2. Transfer to paper towels to drain.
3. Reserve 1–2 teaspoons bacon fat (optional, for extra flavor).

3. Prepare Sauerkraut
• Pat sauerkraut dry with paper towels.
• Sauté briefly in reserved bacon fat (2–3 minutes) to remove excess moisture and mellow acidity.

4. Assemble & Melt
1. Transfer crispy tots to an oven-safe skillet or baking dish.
2. Sprinkle evenly with bacon, sauerkraut, Swiss, and mozzarella.
3. Add black pepper and caraway seeds if using.
