
🍠 Sweet Potato Rounds with Brie, Walnuts & Cranberry-Honey Glaze 🍯
Ingredients (Makes ~24 rounds)
• 2 large sweet potatoes (orange-flesh preferred)
• 2–3 tbsp olive oil
• ½ tsp salt
• ¼ tsp black pepper
• ½ tsp cinnamon or smoked paprika (optional)
Toppings
• 6–8 oz Brie cheese, cut into small slices
• ½ cup walnuts, roughly chopped and lightly toasted
• Fresh thyme (optional)
Cranberry-Honey Glaze
• ½ cup cranberry sauce (whole berry or jellied)
• 2 tbsp honey (more if you want sweeter)
• 1 tbsp orange juice or water
• 1 tsp orange zest (optional)

Instructions
1. Prepare the Sweet Potato Rounds
1. Preheat oven to 425°F (220°C).
2. Wash sweet potatoes and slice into ½-inch thick rounds.
3. Toss rounds with olive oil, salt, pepper, and optional cinnamon/paprika.
4. Arrange on a parchment-lined sheet pan.
5. Bake 20 minutes, flip, then bake another 10–15 minutes until soft with golden edges.

2. Make the Cranberry-Honey Glaze
1. In a small saucepan over low heat, combine:
• Cranberry sauce
• Honey
• Orange juice
2. Stir until warm and pourable (2–3 minutes).
3. Add orange zest if using.
4. Set aside.
