
Potatoes YAY OR NAY!
Ingredients:
For the Potatoes:
4 large russet potatoes
Olive oil
Salt
For the Steak:
1 lb ribeye or sirloin steak, diced
Salt and pepper to taste
1 tsp garlic powder
1 tbsp butter
For the Shrimp:
1 lb large shrimp, peeled and deveined
2 tbsp butter
4 garlic cloves, minced
1 tsp Cajun seasoning
Juice of ½ lemon
Chopped parsley (optional)
For Toppings:
1 cup shredded cheddar cheese
½ cup sour cream
4 slices cooked bacon, chopped
2 green onions, sliced
Instructions:
Bake the Potatoes:
Preheat oven to 400°F (200°C).
Scrub and dry potatoes. Rub with olive oil and salt.
Bake for 45–60 minutes until fork tender.
Cook the Steak:
Season diced steak with salt, pepper, and garlic powder.
Sear in a hot skillet with butter for 3–5 minutes until browned. Set aside.
Cook the Shrimp:
In the same pan, melt butter. Add garlic, then shrimp.
Season with Cajun seasoning and lemon juice. Cook for 2–3 minutes per side until pink. Set aside.
Assemble the Potatoes:
Slice open baked potatoes and fluff the insides.
Sprinkle cheese, then top with steak and shrimp.
Add sour cream, bacon bits, and green onions.
