Savory Lamb Chops with Shrimp Fried Rice
Ingredients:
3–4 lamb chops
1/2 lb large shrimp, peeled and deveined
2 cups cooked jasmine or long-grain rice (preferably day old)
2 eggs, lightly beaten
1/2 cup peas (fresh or frozen)
1/4 cup diced red onion
2 garlic cloves, minced
2–3 tbsp soy sauce
2 tsp sesame oil (plus more for lamb)
1 tbsp vegetable oil
1 tbsp butter
Salt and black pepper, to taste
Optional: Drizzle of hoisin or teriyaki sauce for serving
Instructions:
Season lamb chops with salt, pepper, and a little sesame oil. Grill or sear in a hot skillet until browned and cooked to your desired doneness, about 3–4 minutes per side. Let rest.
Season shrimp with a pinch of salt and pepper. Sear in the same pan until pink and just cooked through, about 2 minutes per side. Set aside.
In a large skillet or wok, heat vegetable oil and butter. Add onion and garlic, sauté 1 minute, then stir in peas.
Push veggies to the side and scramble eggs in the pan. Mix everything together.
Add rice, break up any clumps, and toss until heated through.
Drizzle in soy sauce and sesame oil. Stir until rice is coated and everything is well mixed.
Top fried rice with seared lamb chops and shrimp. Finish with a drizzle of hoisin or teriyaki sauce if desired.
Serve hot for a fusion meal featuring savory lamb, juicy shrimp, and aromatic fried rice.
