🍐Baked Pears with Berries, 🫐 Honey, Walnuts & Blue Cheese 🧀🍯
Ingredients (Serves 4)
• 2 ripe but firm pears (Bosc or Anjou work well)
• ¼–⅓ cup mixed berries (fresh or frozen: blueberries, raspberries, blackberries)
• ¼ cup walnuts, roughly chopped
• 2–3 tbsp honey (plus extra for drizzling)
• 2–3 tbsp crumbled blue cheese
• 1 tbsp butter (optional, for extra richness)
• Pinch of cinnamon (optional)
⸻
Instructions
1. Prep the Pears
• Preheat oven to 375°F (190°C).
• Halve pears lengthwise and scoop out the core with a spoon or melon baller to create a small “well.”
• Place cut-side up in a baking dish.
2. Fill the Pears
• Divide berries evenly among the pear halves.
• Sprinkle chopped walnuts over the berries.
• Drizzle each pear with honey.
• Add a tiny dab of butter to each well if you want extra caramelization.
3. Bake
• Bake for 20–25 minutes, until pears are tender but not mushy. (If they start to brown too quickly, cover loosely with foil.)
4. Add the Blue Cheese
• Remove pears from the oven and immediately crumble blue cheese over the warm fruit so it softens and melts slightly.
• Drizzle with a little more honey if desired.
5. Serve
• Serve warm on their own, or pair with:
• A small green salad (for a savory appetizer)
• Vanilla ice cream or Greek yogurt (for dessert)
