Spinach, Feta & Sun-Dried Tomato Stuffed Mushrooms 🍄💚🧀

🧂 Ingredients

For the Mushrooms 🍄
• 🍄 Large mushrooms (button or portobello), stems removed
• 🫒 Olive oil
• 🧂 Salt
• ⚫ Black pepper

For the Filling 💚🧀
• 🌿 Fresh spinach, chopped
• 🧀 Feta cheese, crumbled
• ☀️ Sun-dried tomatoes, finely chopped
• 🧄 Garlic, minced
• 🧅 Green onions or shallots, finely chopped
• 🍞 Breadcrumbs (optional for texture)
• 🧈 Butter or olive oil
• 🍋 Lemon zest (optional, for freshness)
• 🌶️ Red pepper flakes (optional for heat)

For Topping ✨
• 🧀 Extra feta
• 🌿 Parsley or basil
• 🫒 Olive oil drizzle

👨‍🍳 Instructions

1️⃣ Prep the Mushrooms
1. Preheat oven to 190°C / 375°F.
2. Clean mushrooms and remove stems.
3. Brush caps lightly with olive oil, salt, and pepper.
4. Place on a baking tray.

2️⃣ Make the Filling
1. In a pan, heat butter or olive oil.
2. Add garlic + onions and sauté until soft.
3. Add chopped spinach and cook until wilted.
4. Stir in feta, sun-dried tomatoes, breadcrumbs (optional), lemon zest, and pepper flakes.
5. Mix into a thick, flavorful filling.

3️⃣ Stuff the Mushrooms

Spoon generous amounts of filling into each mushroom cap.

4️⃣ Bake

Bake for 15–20 minutes, until the mushrooms are tender and the tops look golden.

5️⃣ Finish
• Add extra feta on top
• Drizzle with olive oil
• Garnish with parsley or basil
