
Garlic Butter Baked Shrimp with Corn
Ingredients:
2 lbs large shrimp, peeled and deveined (tails on or off)
1/2 cup (1 stick) unsalted butter, melted
4 cloves garlic, minced
1 tsp paprika
1/2 tsp crushed red pepper flakes (optional)
1 tsp salt
1/2 tsp black pepper
2 tbsp fresh lemon juice
2 tbsp chopped fresh parsley (or 1 tsp dried parsley)
2–4 ears of corn, halved or cut into chunks
Instructions:
1. Preheat Oven:
Preheat your oven to 400°F (200°C).
2. Prepare Shrimp & Corn:
Arrange shrimp in a single layer in a large baking dish or foil tray. Add corn pieces around the edges.
3. Make Garlic Butter Sauce:
In a small bowl, combine melted butter, minced garlic, paprika, red pepper flakes (if using), salt, black pepper, and lemon juice.
4. Pour & Toss:
Pour the garlic butter mixture over the shrimp and corn. Toss gently to coat everything evenly.
5. Bake:
Bake uncovered for 12–15 minutes, or until shrimp are pink and cooked through. (Don’t overcook—shrimp cook fast!)
6. Garnish & Serve:
Sprinkle with fresh parsley and serve immediately with extra lemon wedges if desired.
