
🍯Honey Sesame Salmon with Rice Noodles & Roasted Veggies🍣🍜
Ingredients (2–3 servings)
Salmon:
• 2 salmon fillets
• 2 tbsp honey
• 1 tbsp soy sauce
• 1 tbsp rice vinegar or lemon juice
• 1 tsp sesame oil
• 1 garlic clove, minced
• 1 tsp grated ginger
• 1 tsp toasted sesame seeds
Rice noodles:
• 6–8 oz rice noodles
• 1 tsp sesame oil
• 1–2 tsp soy sauce
• 1 green onion, sliced (optional)
Roasted vegetables:
• 2 cups broccoli florets
• 1 red bell pepper, sliced
• 1 carrot, sliced
• 1–2 tbsp neutral oil
• Salt and pepper
• Optional: 1 tsp soy sauce for finishing
Instructions
1. Heat oven to 425°F (220°C).
2. Prepare marinade: Mix honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger.
3. Marinate salmon: Place fillets on a lined baking sheet. Spoon marinade over the top. Let sit 10 minutes.
4. Prepare vegetables: Toss broccoli, bell pepper, and carrot with oil, salt, and pepper. Spread on a separate sheet pan.
5. Roast vegetables for 20–25 minutes, stirring once.
6. Bake salmon on the upper rack for 12–15 minutes, until cooked through and glazed.
7. Cook rice noodles according to package instructions. Drain. Toss with sesame oil and soy sauce.
8. Assemble: Serve salmon over the noodles with roasted vegetables. Spoon any extra pan sauce over the top. Sprinkle with sesame seeds and green onions.
