✅ Ingredients (Serves 3–4)
For the steak bites
• 1–1.5 lb sirloin steak (or ribeye / NY strip), cut into bite-sized cubes
• 2 Tbsp olive oil
• 3 Tbsp butter
• 4 cloves garlic, minced
• 1 tsp Worcestershire sauce (optional, adds depth)
• Salt & black pepper, to taste
• ½ tsp smoked paprika (optional)
For the Alfredo rigatoni
• 12 oz rigatoni pasta
• 2 Tbsp butter
• 3 cloves garlic, minced
• 1 cup heavy cream
• ¾ cup grated Parmesan cheese (fresh melts best)
• ½ cup reserved pasta water (use as needed)
• Salt & black pepper, to taste
• Optional: crushed red pepper flakes, to taste
• Optional: fresh parsley or basil for garnish

🍳 Instructions
1. Cook the pasta
1. Bring a large pot of salted water to a boil.
2. Cook rigatoni until al dente.
3. Reserve ½ cup pasta water, drain, and set aside.

2. Make the Alfredo sauce
1. In a large skillet over medium heat, melt 2 Tbsp butter.
2. Add garlic and sauté 30 seconds (don’t brown).
3. Stir in heavy cream and bring to a gentle simmer.
4. Add Parmesan and whisk until smooth and creamy.
5. Season with salt, pepper, and red pepper flakes (optional).
6. Add cooked rigatoni and toss to coat.
7. If sauce gets too thick, add a splash of pasta water.
Keep warm on low heat while you cook the steak bites.

3. Cook the garlic butter steak bites
1. Pat steak dry with paper towels — helps sear properly.
2. Season generously with salt, pepper, and smoked paprika.
3. Heat olive oil in a cast-iron or heavy skillet on high heat.
4. Add steak in a single layer; don’t overcrowd.
5. Sear 1–2 minutes per side (do not overcook).
6. Reduce heat to medium; add butter + garlic + Worcestershire.
7. Toss steak bites in the garlic butter for 1 minute.
