Ingredients
12 oz spaghetti
1 lb steak (sirloin, ribeye, or flank), cut into bite-sized pieces
1 cup sun-dried tomatoes (packed in oil or rehydrated)
2 cups fresh spinach
2 tablespoons olive oil, divided
3 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
½ cup beef broth
¾ cup freshly grated Parmesan cheese
½ teaspoon Italian seasoning
Salt and black pepper, to taste
Optional garnish: fresh parsley or crushed red pepper flakes
Directions
Cook the spaghetti
Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Drain and set aside.
Sear the steak bites
Pat steak dry and season with salt, pepper, and Italian seasoning. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear steak bites for 3–5 minutes until browned and cooked to your liking. Remove and set aside.
Sauté garlic & sun-dried tomatoes
In the same skillet, melt butter with remaining olive oil. Add minced garlic and sauté 30 seconds until fragrant. Stir in sun-dried tomatoes and cook 1–2 minutes.
Make the creamy Tuscan sauce
Pour in heavy cream and beef broth, simmering 3–4 minutes until slightly thickened. Whisk in Parmesan cheese until smooth. Adjust seasoning with salt and pepper.
Add spinach & combine
Stir in fresh spinach and cook 1–2 minutes until wilted. Return steak bites to the skillet and toss with spaghetti to coat everything in the creamy sauce.
Serve
Garnish with fresh parsley or crushed red pepper flakes if desired. Serve warm and enjoy a rich, Tuscan-inspired steak pasta.
