
Creamy Garlic Shrimp Over Mashed Potatoes
Ingredients:
**For the Shrimp:**
– 1 lb shrimp, peeled and deveined
– 2 tbsp olive oil
– 3 tbsp unsalted butter
– 4 cloves garlic, minced
– 1/2 cup chicken or vegetable broth
– 1/2 cup heavy cream
– 1 tsp Dijon mustard (optional)
– 1/4 tsp smoked paprika
– Salt and black pepper to taste
– 1 tbsp chopped fresh parsley (for garnish)
**For the Mashed Potatoes:**
– 2 lbs russet potatoes, peeled and cubed
– 4 tbsp unsalted butter
– 1/2 cup whole milk (or more as needed)
– Salt to taste
Directions:
**For the Mashed Potatoes:**
1. Bring a large pot of salted water to a boil. Add potatoes and cook for 15–20 minutes until fork-tender.
2. Drain and return to the pot. Add butter and milk, then mash until smooth. Season with salt. Keep warm.
**For the Shrimp:**
3. Heat olive oil in a skillet over medium heat. Add shrimp, season with salt, pepper, and paprika. Cook for 2–3 minutes per side until pink. Remove and set aside.
4. In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
5. Pour in broth and bring to a simmer. Stir in cream and mustard (if using). Simmer until slightly thickened, about 4–5 minutes.
6. Return shrimp to the pan, coating well in the sauce. Cook for another 1–2 minutes.
7. Serve shrimp and garlic cream sauce over a generous portion of mashed potatoes. Garnish with parsley.
